House Home Photo Salad Beets Recipes With Microgreens

Healthy dishes with arugula, beets, kale and more.

New Zealand-based cookbook author Fionna Hill has released her fourth book, Microgreens: How to Grow Nature's Own Superfood (2010 Firefly Books). She passes on simple tips for growing small pots of microgreens on terraces, balconies, or even windowsills in the winter. Larger than sprouts and smaller than baby greens, microgreens are the tiny seedlings of herbs and vegetables — think arugula, beets, kale, radish, wheatgrass and basil. Try one of these simple vegetarian recipes that incorporate these healthy greens.
