Curry adds spice to a cookout favourite.
40 baby new potatoes, peeled
1/2 cup mayonnaise
3 tbsp sour cream
1 tsp prepared red curry paste
1 clove garlic, crushed
4 green shallots, chopped
1 oz. golden or sultana raisins (optional)
1 tbsp plus
1 tsp fresh coriander, chopped
1 tbsp plus 1 tsp fresh mint, chopped
1/3 cup plus 3 tbsp shelled pistachios, toasted
Step 1: Place potatoes in a steamer pot over boiling water. Cover and steam 10 minutes or until tender.
Step 2: Combine mayonnaise, sour cream and curry paste and garlic in a bowl and mix well.
Step 3: Combine warm potatoes with shallots, raisins, coriander and mint and dressing in a bowl and mix well. Sprinkle with toasted pistachios.
