Yield:
6 servings
Ingredients:

2 cups all-purpose flour
2 tbsp sugar
1/4 tsp salt
6 oz. cold cream cheese, cubed
6 oz. cold unsalted butter, cubed

Instructions:

Step 1: Combine flour, sugar and salt in a food processor and buzz until combined.

Step 2: Add cream cheese and butter and pulse until mixture forms very large clumps.

Step 3: Remove and shape pastry mixture into 2 flat discs. Wrap in plastic and chill in fridge for 30 minutes.*

Step 4: Place a large sheet of parchment paper on counter and dust lightly with flour. For a 9" pie plate, unwrap one disc of chilled pastry and place on parchment paper. Roll pastry into a 12" circle. Roll the second disc of pastry into an 11" circle for the lid.

*For a large free-form galette, shape the pastry into one large disc before chilling, then roll out to a 16” circle.
