These bite-sized party appetizers are perfect when summer-fresh tomatoes are in season, or any time of the year for holiday entertaining.
4-6 fresh tomatoes
Salt and pepper to taste
1 cup chopped softened sun-dried tomatoes
1-1/2 cups sour cream
1/4 cup mild horseradish
1/4 cup chopped fresh basil
2 tbsp olive oil
1/2 cup chopped fresh chives
Pine nuts and black pepper for garnish
Step 1: Slice tomatoes in 1/4" rounds and arrange on a platter. Salt and pepper to taste. Put the sun-dried tomatoes on top of the fresh.
Step 2: In a small bowl mix together the sour cream, horseradish, basil and olive oil. Spoon over the tomatoes. Top with the chives and salt and pepper.
