This is a great recipe for a popular Chinese dish.
4 tbsp canola or olive oil
1 bunch broccoli, washed and chopped
1 cup chopped celery
4 green onions, finely sliced
2 cloves garlic, minced
1 lb. lean beef, sliced 1/8-1/4" thick
2 tbsp cornstarch
4 tbsp water
Sauce
2 cups chicken or vegetable broth
2 tbsp light soy sauce
2 tbsp rice vinegar
1 tbsp fresh grated gingerroot
1 tsp sugar
1 tsp crushed red pepper flakes, or to taste
Step 1: Mix together sauce ingredients and set aside.
Step 2: Heat 2 tbsp oil in a wok or large skillet over medium-high heat. Add broccoli, celery, green onion and garlic and stir fry for 3 minutes. Remove and set aside.
Step 3: Add 2 tbsp oil to wok or skillet. Stir fry beef over high heat until done. Add vegetables and sauce and cook over medium heat for one minute.
Step 4: Combine cornstarch and water. Add to mixture and cook, stirring frequently, until sauce thickens. Serve over rice.
