
A wonderful salad to make during the summer peach season.
2 large hearts Romaine lettuce
1 ripe peach
1 small log plain goat cheese
1/2 small red onion, slivered
Vinaigrette
1 tsp Dijon mustard
1/4 cup balsamic vinegar
1 shallot, chopped
2/3 cup olive oil
2 tbsp honey
White truffle oil (optional)
Salt and pepper
Step 1: Gently tear the leaves of the Romaine lettuce into bite-sized pieces. Sliver the peach and add to the lettuce.
Step 2: Whisk together the mustard, balsamic vinegar and chopped shallot. Slowly drizzle in the olive oil, allowing the ingredients to combine into an emulsion. Add honey, truffle oil and salt and pepper to taste.
Step 3: Add half of the vinaigrette, crumbled goat cheese and red onion; toss.
