Lynda Reeves' recipe for spicy party appetizers. "You can buy Chinese sausages fresh from Asian markets such as T&T on Cherry Street in Toronto. They are heavenly; I don't buy the very hot ones just the medium hot ones. You can also buy them packaged like hot dogs. The only brand of packaged ones to use are the Yum Yen Jan (Chinese-style spicy sausages)." Pick up some bamboo appetizer sticks from your local Chinatown for guests to pick up sausages with.
One package of Chinese sausages or four large fresh sausages
2/3 cup fish sauce
1/3 cup water
1/2 or 1 tsp finely chopped ginger (I like it very gingery)
Step 1: Steam sausages in a steamer until soft and heated through, or sauté in 1" of water in a skillet. The water helps to dissolve the fat and keep it from sticking.
Step 2: After about ten minutes of simmering, grill the sausages in a grill pan with a little oil (not olive). Use either peanut, sunflower or corn oil.
Step 3: When they're nicely browned (not burnt) remove and slice into very thin rounds.
Step 4: Combine all ingredients for dipping sauce in a small bowl, and serve alongside sliced sausages and bamboo appetizer sticks.
