
A quick and easy summer frozen dessert that can be made anytime — and with other fruit combinations.
3 Ontario peaches, ripe but firm (peeled, pitted and sliced, about 2 cups)
1/2 cup raspberries
Simple Syrup
1/2 cup granulated sugar
1/2 cup water
1 strip lemon rind
Step 1: Freeze peach slices and raspberries in a single layer for at least 2 hours or until solid. Store in freezer bags or air-tight containers.
Simple Syrup
Step 1: In small saucepan, bring sugar, water and lemon rind to boil, stirring to dissolve sugar. Boil for 1 minute. Cool completely and remove rind.
Step 2: In food processor, process frozen fruit, pouring in syrup slowly, until smooth, 2-3 minutes. Serve immediately or store in freezer.
