A summer salad from Food Network star Gordon Ramsay.
1 canteloupe melon
1 honeydew melon
10 oz. mixed berries, such as blueberries, blackberries and raspberries
1-2 tsp runny honey, to drizzle handful of mint, shredded
Step 1: Halve the melons, remove and discard the seeds, then use a melon baller to carve out the flesh in balls (or simply cut it into small chunks if you prefer).
Step 2: Divide the melon balls and mixed berries between individual serving bowls (or simply toss them together in a large salad bowl).
Step 3: Finely grate the rinds from the lime and orange over the fruit salad. Cut the lime and orange in half and squeeze a little juice over each serving. Drizzle with a little honey, then scatter over the shredded mint. Best served slightly chilled.
