A healthy lunch recipe.
4 cups mizuna greens
1/2 cup finely julienned radish
6 fresh shiitake mushrooms, sliced
1/2 cup finely julienned green onions
2 tbsp red miso
1/4 cup boiling water
1 tbsp mirin
1 tsp soy sauce
2 tbsp rice wine vinegar
1 tbsp sesame oil
1/4 tsp fresh ground pepper
1/2 cup toasted sesame seeds
Step 1: Rinse and dry greens and toss with chopped radish, mushrooms and onions.
Step 2: Place miso in a small bowl. Pour the boiling water over the miso, stirring well to incorporate.
Step 3: Add the mirin, soy sauce, rice wine vinegar and sesame oil. Sprinkle in the pepper and mix well.
Step 4: Drizzle 4-5 tbsp of dressing over the mixed salad greens and toss gently until well coated. Serve on individual plates garnished with sesame seeds.
