3/4 lb. penne or other short pasta
1 cup fresh parsley, leaves and stems, chopped
1/4 cup + 2 tbsp olive oil
1 clove garlic, finely chopped
3 tbsp lemon juice
Grated zest of 1 lemon
2 skinless, boneless chicken breasts, cut into strips
1/2 cup grated Parmesan
Salt and pepper
Step 1: Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain and set aside.
Step 2: In a bowl, combine parsley, 1/4 cup olive oil, garlic, lemon juice and zest. Season with salt and pepper.
Step 3: In a skillet, brown the chicken strips in 2 tbsp olive oil. Season with salt and pepper.
Step 4: Add half the parsley and lemon oil mixture to the chicken and cook for 1 minute to coat.
Step 5: Add the cooked pasta and remaining parsley and lemon oil mixture. Toss to coat and heat through.
Step 6: Sprinkle with fresh Parmesan, season to taste, and serve.
