Refreshing Lemonade Recipe

An easy summer drink.

Yield: 
8 servings
Ingredients: 

1 cup granulated sugar
1 cup water
Zest of 1 lemon, cut in strips with peeler*
1-1/2 cups freshly squeezed lemon juice (8-10 lemons)
8 cups cold water

* When zesting, only use the yellow part of the lemon peel — the white pith tastes bitter.

Instructions: 

Step 1: In small saucepan, stir together sugar, water and lemon zest. Bring to a boil, stirring until sugar dissolves. Let cool. Discard lemon zest.

Step 2: In large pitcher, combine lemon juice, cold water and sugar syrup and stir until well mixed; refrigerate.

Step 3: Fill one ice cube tray with lemonade and freeze until solid. Add ice cubes to pitcher or glasses of chilled lemonade just before serving. Keeps well in the fridge up to 5 days.
