A delicious and exotic starter or impressive cocktail party hors d'oeuvre.
1/2 lb. beef tenderloin (2" thick, sliced sideways)
2 bundles glass noodles (bean thread vermicelli, pre-soaked)
3/4 cup shredded green mango
1 shredded carrot
3/4 cup green papaya (shredded)
1/3 cup snow peas (thinly cut lenghtwise)
16 Thai basil leaves (all stems removed)
4 Thai chilies (birdseye)
8 pieces green leaf lettuce
8 sheets small rice paper (pre-soaked)
2/3 cup ground unsalted roasted peanuts
1/3 tsp ground turmeric
4 Thai chilies
1 tbsp minced garlic
3/4 cup coconut milk
3 tbsp brown sugar
2 tsp salt
1 tbsp lemon juice
Step 1: Sear beef on both sides for about 2 minutes.
Step 2: Mix all vegetables together.
Step 3: Assemble beef and vegetables on rice paper. Roll. Serve with peanut sauce.
Step 1: Combine all ingredients in a small saucepan, simmer for 15 minutes. Cool.
Step 2: Add salt and lemon juice to taste.
