
This may seem like a lot of tomatoes, but they’re so addictively delicious, everyone always wants more! Roasting them on their vine makes for a beautiful presentation, but 3 pints of loose regular cherry tomatoes will work just as well. If you like a little heat, add 1/2 tsp chili flakes to the mixture.
2 lb. cherry tomatoes on the vine
3 tbsp olive oil
1/2 tsp salt
1/2 tsp sugar
Pinch saffron threads
Freshly ground black pepper
1/2 tsp chili flakes, if desired
Step 1: Preheat oven to 400°F.
Step 2: Line a rimmed baking pan with parchment paper. Lay tomatoes in a single layer on pan.
Step 3: In a small bowl whisk together olive oil, salt, sugar, saffron threads, black pepper and chili flakes, if using. Drizzle mixture over tomatoes.
Step 4: Roast 15 minutes, or until skins are cracked and tomatoes look wrinkled. Serve immediately.
