A very simple dessert, a parfait is ideal after a summer lunch or evening meal when you want to keep things light.
5 cups fresh strawberries, hulled
2 tbsp white sugar
1 pint heavy cream
6 egg whites
Fresh strawberries slices for garnish
Step 1. Place strawberries in a food processor and process until chopped but chunky. Transfer to a large bowl, add sugar and stir until combined.
Step 2. In a bowl, whip cream with a hand mixer until stiff peaks form. In another bowl, whip egg whites with a hand mixer until stiff peaks form.
Step 3. Fold whipped cream into strawberries then fold egg whites into strawberry mixture. Serve immediately in tall parfait glasses and garnish with sliced strawberries if desired.
