Walnuts add crunch to this chicken salad pita.
1/2 cup fresh spinach, finely chopped
1/3 cup low-fat mayonnaise
1/4 cup chopped green onion
1/4 cup finely chopped celery
1/2 tsp dry mustard
1 tbsp chopped fresh dill or 1/2 tsp dried dill
2 cups diced cooked chicken
1 Granny Smith apple, cored and diced
1/2 cup toasted walnuts, chopped
Salt and freshly ground black pepper, to taste
Several leaves Romaine lettuce
4 whole wheat pitas, sliced in half
Step 1: In a large bowl, combine the spinach, mayonnaise, green onion, celery, mustard and dill.
Step 2: Add the chicken, apple and walnuts and blend well. Season with salt and pepper to taste.
Step 3: Place a lettuce leaf in each pita half, top with 1/2 cup of the salad mixture and serve.
