this is the one i make...
Alfredo Sauce:
1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano
Freshly cracked black pepper
Chopped fresh flat-leaf parsley, for garnish
To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.

From the Weight Watchers Cookbook.
Melt 1 Tbsp. margarine in a medium size pot. Saute 2 cloves crushed garlic.
Add 1 Tbsp. flour and whisk, add 1 cup milk and whisk until smooth. Add 1/4 cup cream cheese and 1/4 cup Parmesan cheese and whisk all until smooth.
Steam: 1 cup broccolli flowerets, 1/2 carrot, 1 red papper, 1 stalkc celery, all thinly slices.
4 cups cooked linguine.
Toss pasta with veggies and pour sauce over and toss again. 4 servings
Calories 276. Fat 5 gm. Carbs 3 gm. Points per serving = 5.
LOL...I am trying to find healthy alternatives without giving up all the yummy food I like. DH and I go to Marche in downtown Toronto at least 2-3 times a week,,,It just seems that I could make all that stuff at home. Believe me...I want to indulge...Oh my mouth is already watering...lol...and I just came from there.
Come on Princess a light Alfredo that is like eating light ice cream LOL indulge and enjoy the rich creamy sauce that makes Alfredo so yummy. ;)

This one is very rich but yummy!

12 oz (375 g) fettuccine
•
3 cups (750 mL) broccoli florets
•
1 cup (250 mL) whipping cream
•
1/4 cup (50 mL) butter
•
1 cup (250 mL) grated Parmesan cheese
•
1/2 tsp (2 mL) salt
•
1/4 (1 mL) tsp pepper
•
Pinch nutmeg
In large pot of boiling salted water, cook pasta for 6 minutes. Add broccoli; cook until pasta is tender but firm and broccoli is tender-crisp, about 2 minutes. Drain well and return to pot.
Meanwhile, in saucepan, bring whipping cream and butter just to boil. Reduce heat and stir in Parmesan cheese, salt, pepper and nutmeg; add to pasta and toss to coat.
