I have an old bookcase (my dad's friend made it highschool shop class). It's about 6' tall and 3' wide and 1' deep. I am really tired of it, and am thinking about covering it with sisal or a bamboo type material. Also I want to build doors for the front of it, so it collects less clutter. Any suggestions on how to apply something like this, or ideas on how to make the doors. I was thinking of making the doors frames out of bamboo tied at the corners with a natural string/ twine. Has anyone done a project like this before? Any ideas or advice are welcome.

I think to apply anything to the body of the bookcase, you should ask at a hardware store. I think whatever you use as adhesive will depend on the finish that is on the outside now. It's probably easiest if you can use a spray adhesive or one you can roll on.
As for the doors...I suppose that depends on how good you are with tools (saws anyway). You can always check out the premade doors to see if any fit or buy some wood and have them cut it to size in the store.
I think to use just bamboo, you may have trouble keeping them square. It's probably easier and sturdier if you have a door and then attach the bamboo etc. right to it.
I'm sure if you tell someone helpful at the hardware store what you want to do, they can give you ideas about what products you need (including hinges and closures). Give it a try and see what they say (and if they are toads, go to another store or ask someone else. I've found that if I get to the right person, I can find out what I need to know and it helps if the store isn't busy at the time too).
