This is a dessert we usually make in the summer time, since the fresh blueberries are out. You can use frozen blueberries.. but it doesn't turn out nearly as good.
1/2 cup butter
3 tbsp brown sugar
2 cups graham wafer crumbs
1 package cream cheese
1 cup white sugar
1/4 tsp salt
1 tsp vanilla
cool whip (the bigger container)
3 cups blueberries
-Melt butter.
-Combine butter, brown sugar,
1 3/4 cups of graham wafer crumbs.
-Press mixture into bottom of buttered pan (I find a good size is the ones that are apx. 8 X 10, I don't know the official size, sorry)
-Put pan with mixture in refrigerator while completing the recipe.
-Blend cream cheese, white sugar, salt and vanilla until smooth with a hand mixer.
-Carefully fold in blueberries.
-Spread mixture over the chilled crust.
-Spread cool whip over mixture.
-Sprinkle remaining 1/4 cup of graham wafer crumbs over cool whip.
I personally find this recipe is better if you leave in the refrigerator a couple of hours before serving. It's even better overnight!
