Fat Free Sugar Free Banana Muffin

I am trying to find a good edible fat free sugar free banana muffin recipe. I have tried some that I found on calorie counter website but they are not very good, actually they are awful.

Does anyone have a good banana muffin recipe and maybe I can tweak it to be fat free sugar free?

Splenda makes a brown sugar version which you can use measure for measure in recipes like this. It bakes well so that might help you with the lower sugar aspect.

Here is the recipe I got from Weight Watchers it is only 1 point per muffin so that is really low.
LOW FAT BRAN MUFFINS

2 cups whole wheat flour
3 cups white flour
5 tsp. baking soda
1 Tbsp. salt
1 1/2 cups brown sugar
3 cups natural bran ( suggests Rogers)
3 cups All Bran cereal
2 cups raisins
2 eggs and 2 egg whites
1 cups apple sauce
1/4 cups molasses
1 quart buttermilk (1%)
1 1/2 cups water

Mix dry ingredients in a large bowl and make a well in the center.
Beat eggs in a separate bowl and add all liquid ingredients. Add to dry mixture and mix well. Refrigerate over night.
Preheat oven to 400F. Stir batter well and fill muffin tins 2/3 full
Bake for 17-20 minutes

I add a block of dates to mine I put them in a pan and add water to keep them from boiling dry and boil them up to soften when they are cooled I add them to the wet mixture with the liquid. This adds to the point value but they are so nice and moist and yummy it is worth it. It makes 5 dozen muffins and they freeze really well.

I think you might have more luck searching if you take out the 'free' in the description. Just the nature of the beast means anything banana (or raisin or date) has quite a bit of sugar in it naturally, but if you use 'low' or 'no sugar added' you should find quite a few.

Otherwise I can tell you the Atkins banana muffin mixes are pretty good and no added sugars. They are also really easy to make and don't taste bad at all (some banana mixes have a not so yummy artificial flavour).

Thanks Jeep I will check the Weight Watchers website. I did use splenda and applesauce but like you mentioned fat free is making them dry. Maybe I should just eat them with some butter!

You can use Splenda in place of the sugar have at look at Weight Watchers.ca they have some that are low fat low sugar and anything I have made from their recipes has been quite good. My Mom was always trying to make fat free muffins and they were awful. You can also use some applesauce and reduce the fat but total fat free will be pretty dry I think.
