I'd like to try making cereal bars -- anyone have a recipe??

Welcome to the boards, Teresa :) Your recipe sounds yummy!! I never thought of putting banana in a cereal bar -- interesting!! I like recipes like yours (and the other ones posted) where you can vary the ingredients according to your taste and what you have on hand. I made a batch of cereal bars a couple of weeks ago and added dried strawberries -- yummy!! Dried cherries & cranberries are good too :)

I'll try your recipe soon :) Have to remember to buy bananas next time I'm out grocery shopping!!

The other thing, I forgot to say about my yummy ceral bars, is that although the recipe states it makes 14 bars, I usually get about 10-12. Probably I make them in a smaller tin than recommended, and a bit thicker. Obviously that would alter the nutritional values of each bar.

Hi There - I have this recipe from a magazine (in England) and have made these delicious cereal bars several times - they are really delicious and healthy. I often send them to school in my childrens lunch boxes:

2tbsp sunflower seeds
2tbsp pumpkin seeds
2tbsp linseeds
2 bananas (about 300g (10 1/2oz) in total, weighed with their skins on)
100g (3 1/2oz) unsalted butter
3tbsp golden syrup
50g (1 3/4oz) millet flakes
100g (3 1/2oz) rolled oats
100g (3 1/2oz) stoned dried dates, roughly chopped

preperation time: 25mins
cooking time: 30 mins

1. Preheat the oven to 180c (350f, gas mark 4). Grease a cake tin (mine is about 9in x 9in), and line the bottom with parchment paper.
2. Roughly chop the sunflower seeds, pumpkin seeds and linseeds. Peel and roughly mash the bananas
3. Melt the butter and golden syrup together. Add the chopped seeds, mashed bananas, millet flakes, rolled oats and dates. Mix together well, then spoon the mixture into the prepared tin and level the surface.
4. Bake for about 30 mins or until golden brown. Leave to cool in the tin for 5 mins, then mark into 14 bars and leave to cool completely. The bars can be kept in an airtight tine for up to 2 days. The cereal bars can be frozen and kept for 2 months - wrap them individually in freeze-wrap or foil. Then if you simply pack a frozen bar into a plastic container with wrapped sandwiches, it will have thawed by lunchtime.

fat 10g (of which saturated fat 4g)
carbohydrate 17g
fibre 1g
vitamins: A,B1, B6, E, copper, zinc

ALTHOUGH THE RECIPE STATES LINSEEDS, I USUALLY SUBSTITUTE CHOPPED . MIXED NUTS. ALSO INSTEAD OF MILLET FLAKES, YOU CAN SUBSTITUTE PLAIN FLOUR (EITHER WHITE OF WHOLEMEAL), AND I HAVE EVEN USED PORRIDGE OATS OR READY-BREK - IT'S JUST TO MAKE THE MIXTURE LESS SLOPPY. ANOTHER THING MY CHILDREN LIKE, IS CHOPPED DRIED APRICOTS - THE BEAUTY OF THIS RECIPE IS YOU CAN TRY DIFFERENT STUFF IN IT. WE LOVE IT :applaud:

Cereal Bars (No Bake) Recipe

Serves/Makes: 42

Ingredients:
4 cups toasted oat cereal
2 cups crispy rice cereal
2 cups dry-roasted peanuts
2 cups candy-coated milk chocolate pieces
1 cup light corn syrup
1 cup white sugar
1 1/2 cup creamy peanut butter
1 teaspoon vanilla extract

Directions:

In a large bowl, toss together the toasted oat cereal, rice cereal, peanuts and chocolate pieces; set aside.

Grease a 10x15 inch jellyroll pan.

In a medium saucepan over medium heat, stir together the corn syrup and sugar. Bring the mixture to a boil and cook until sugar is completely dissolved. Remove from heat and quickly stir in the peanut butter and vanilla.

Pour the mixture into the bowl with the cereal mixture and mix well. Press into the prepared pan. Let stand until set. Cut into bars and serve.

This recipe for Cereal Bars (No Bake) serves/makes 42

these are one of my fav's

cranberry trail bars

INGREDIENTS
1/3 cup sesame seeds
1/3 cup raw sunflower seeds
1/3 cup chopped pecans
1/3 cup chopped almonds
1/3 cup unsweetened flaked coconut
3 1/2 cups crisp rice cereal
1 cup dried cranberries
3 tablespoons peanut butter
2 tablespoons butter or margarine
7 cups miniature marshmallows

DIRECTIONS
In a large skillet over medium heat, stir together the sesame seeds, sunflower seeds, pecans and almonds. Cook until the sesame seeds are starting to turn golden, about 3 minutes. Add coconut, and stir until sesame seeds are golden. Watch carefully, as they burn easily. Stir in the cranberries and cereal, and remove from heat.
In a large saucepan, combine the peanut butter, butter and marshmallows. Cook and stir over low heat until marshmallows are melted. Pour in the cereal and nut mixture, and stir until evenly coated. Press lightly into a greased 9x13 inch baking dish. Let stand until cool, then cut into bars. Store in an airtight container, or wrap individually in plastic wrap.

i often vary the nut choices.....as well i mix the cereal up, sometimes using 3 different cereals, brans flakes, ancient grains or what ever i have on hand. they're just yummy...oh and try them with chopped dried apricots, papaya...it's a fun recipe to play around with...these are similar to the fruit cereal bars you buy at second cup. hope this works for you.
