Do people become this way over time or are they born with it?

The cells that line your small intestine produce an enzyme called lactase. Lactase breaks down lactose into two simple sugars — glucose and galactose — which can be absorbed into your bloodstream. Without lactase, the unprocessed lactose moves on to the colon, where the normal intestinal bacteria contend with it. This causes the hallmarks of lactose intolerance — gas, bloating and diarrhea.

I become this way over time and it stop after few months and I dont khow why...

Sometimes people just need to replace the missing enzymes that are causing the problem. So people can be born without some or lose them due to antibiotics or some other reason and thus realize the need to supplement. The trick is you need to get the enzyme you are missing. I had to take one for a while because suddenly things like lettuce were not digesting. It comes and goes and I just take the enzyme I need again when I need it. Sometimes it's taking a probiotic that can help get the gut back in order if this is something new to you (and if it's lactose I wouldn't take yogurt to get it, but caps of real live probiotic. You can tell because they will be in a store's fridge if they are live).

I am thinking it could be similar to developing an allergy.

One day you just find out that you have an intolerance or allergy to strawberries. or etc.....

Could last a 5 - 7 year period and then disappear for a bit only to resurface.

I always thought that you were born with this but that you often do not show signs until adulthood. I know several of my Asian friends have told me that it is more common amongst Asians for some reason.
