Low fat muffins

Does anyone have a super low fat bran muffin recipe? I've looked online the best I can find is 3G of fat per muffin. Years ago there was a recipe that used applesauce instead of oil in muffins. Does anyone remember this??

There's another recipe in the book that uses Pear.
The pear can be substituted for dried cranberries, raisins, apricots, or blueberries

I haven't tried it yet. let me know if u want it too.

I made these from the G.I Diet book. They taste awesome, my kids love them too.
It doesn't say how much fat is in them, but being G.I. they are probably very low.

Apple Bran Muffin

3/4 cup All-Bran or Bran Buds cereal
1 cup skim milk
2/3 cup whole wheat flour
1/3 cup sugar substitute (like Splenda)
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground allspice
1/2 tsp ground cloves
1 1/2 cups oat bran
2/3 cup raisins
1 large apple (peeled, cut into 1/4 inch cubes)
1 omega-3 egg (beaten)
2 tsp veg oil
1/2 cup applesauce (unsweetended)

Oven 350F

Spray or line 12 cup muffin tin.
Mix cereal and milk and let stand for a few minutes.
Mix flour, sugar, baking powder, baking soda, salt, allspice, cloves in large bowl.
Stir in oat bran, raisins and apple.
In another bowl, combine egg, oil and applesauce. Stir into dry ingredients and add the bran mixture.
Spoon batter into muffin tin.
Bake 20 minutes.
Makes 12 muffins.

Try them! They are really good, give you energy keep you from going hungry.

I make double the recipe, and freeze the muffins, two in a ziplock bag. When I need them for lunch, I just take them frozen and by the time lunch time comes, they are ready for eating.

LOW FAT BRAN MUFFINS

3/4 c. bran buds
3/4 c. all bran
3/4 c. hot water
Egg Beaters to equal 3 eggs
3 tbsp. applesauce
1 c. non fat dry milk
1 1/2 tsp. vanilla
3 tsp. baking powder
3 tsp. cinnamon
6 tbsp. raisins
6 pkg. Sweet and Low

Combine first 3 ingredients. Let soak 15 minutes. Then add remainder. Bake in muffin tins sprayed with coating spray.

Bake 15-20 minutes at 350 degrees.
