This will surely excite your guests taste buds and not hard to do.
10 slices day old bread
¼ c. butter
½ c. lobster meat
1tsp. mayonnaise
12 large olives
juice of one lemon
salt to taste
Finely chop the lobster meat. Cut the bread into circles, squares, diamonds or other shapes with cookie cutters. Fry in hot butter until nicely browned. Drain on paper towels. Add the salt, mayonnaise and lemon juice to the lobster meat. Mix well. Spread this mixture on the bread. Garnish each canapé with a slice of stuffed olive. Pipe finely mashed pickled beets around the edges for colour. If preferred, crab meat or shrimp may be used in place of lobster.
