Anna Olsen made a "strawberry muffin" on Cityline a while back(month or so). I tried it and followed the recipe exactly and they were terrible. No flavour whatsoever......therefore I threw out the recipe.

Pearlgirl, I am trying out your lemon blueberry muffin recipe. They are in the oven as I type. I'll let you know how they turn out!
Is this recipe from your private collection, or internet find?

You can add to muffin mixes.
an extra egg
2-3 Tbsp. orange or apple juice
then grated carrot or apple, nuts, raisins, coconut
or grated zucchinni

The time is in the grating of the ingredients.

Another favourite is:

[U]Blender Muffins[/U]

1 orange cut into 8 pieces (the whole seedless orange with the peel) Navel are good in this recipe

1/2 cup orange juice
1 egg
1/4 cup oil
1 1/2 cups flour
3/4 cup sugar
1 tsp baking soda
1 tsp baking powder
dash salt

Put ALL this in the blender and blend until smooth.

Then add the flour, BS, BP, blend again.
Add raisins, nuts or 1/2 cup dried cranberries and blend just a little until mixed.

350 * oven for 15-20 min. Makes 12 med. muffins.
No bowls, just the blender to wash.
Fast and easy...

I am embarrased to post...but I just use the Muffin mix ( by Quaker I think)...that you add an egg and water too..................I do sometimes add some lemon or almond flavouring to the mix...to add my touch................oh I am a bad mom.................LOL........................I should make more time to bake but then I would have to give up this forum.................LOL... :laugh:

Thanks Pearl_girl.....they sound GREAT! The oatmeal must be one heavy muffin....it has tons of good stuff in it!

****Lemony Blueberry*****

Ingredients:
2 cups flour
1/2 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
grated zest of 1 lemon
1 egg
1 cup milk
1/2 cup butter, melted
1 cup fresh, frozen or canned blueberries

Topping:
1/2 cup melted butter
1 Tbsp. lemon juice
1/2 cup white sugar

Instructions:
Mix flour, sugar, baking powder, salt and lemon zest in large bowl. Beat egg in medium sized bowl, add milk and butter. Add egg mixture to dry ingredients. Stir unti just mixed (batter will be lumpy.) Stir in blueberries. Fill muffin pans 2/3 full and bake at 425 F. for 20 minutes.

Topping:
Combine melted butter and lemon juice. Measure sugar into separate dish. Dip tops of slightly cooled muffins in melted butter, then sugar. Makes 16 large or 32 small muffins.

*****OAtmeal Muffins******


1 cup (250 mL) Packed dark brown sugar

1/3 cup (75 mL) Butter, melted

2 Eggs, beaten

• 1 cup (250 mL) Milk

• 2 tsp (10 mL) Vanilla

1 cup (250 mL) Grated apple

1/2 cup grated carrot
1/2 cup (125 mL) Chopped walnuts (optional)
I use 1/2 cup coconut


1/2 cup (125 mL) Currants or raisins


1 cup Whole wheat flour


1 cup All-purpose flour


1 cup Rolled oats


4 tsp (20 mL) Baking powder


3/4 tsp salt, 3/4. tsp cinammon, 1/2 trsp nutmeg.

Preparation

In large bowl, beat together sugar, butter and eggs. Stir in milk and vanilla, beating until smooth. Stir in apple, walnuts and currants.

In separate bowl, stir together whole wheat and all-purpose flours, rolled oats, baking powder and salt. Sprinkle evenly over apple mixture; stir together just until blended.

Pour batter into 12 greased or paper-lined muffin tins, filling up to top. Bake in 400°F (200°C) oven for 20 to 25 minutes or until firm to the touch.

These muffins are like a breakfast.
