ok east coasters.....

i've a 9 ounce lobster tail thawing in the fridge for DH's dinner tomorrow...and i thought...who better to ask then our fellow east coasters on the forum...ok...now fess up...how do i cook this thing or which way is best to cook this thing and NOT turn it into leather...i'm making surf and turf for DH tomorrow

how did the lobster tail turn out???

Turn on the broiler....
Cut the lobster tail up the centre and flatten down with the palm of your hand.

Grease broiling pan witha little butter and add a small amount of water to the pan.

Place tail 4" from broiler element, brush with melted butter and a little espelette oil.

Broil membrane side down first.

half way thru cooking time of 8-10 min. flip lobster tail over and brush with the butter/espelette oil.

Total time: under broiler is max. 10 minutes. (5 min. on each side.)

Works for me every time..... :) This recipe from Deer Island. NS.

... this is exactly the kind of cooking emergency that makes me want to keep an old laptop and printer in the kitchen ;)

I can only help you with the real way of cooking seafood. Throw in a bag of salt and you're good to go :D
