What's your favourite pot luck receipe or dish for get togethers? I'm having a Bday party in a couple of weeks & was just looking for some ideas? Anyone? Tnx ;-) macy

This is an exteremely easy receipe that I frequently take over to friends when they move and it is a good change from lasagna...it is particularly popular with kids and teens I buy the grated cheese

4 Cups Monterey Jack Cheese - divided in to two 2cup portions
2 19.5 oz cans of enchilada sauce (the only place I can find it is at Safeway and they are 16.5oz)
2 4oz cans chopped green chillies
2 C sour cream the (500 ml size) - divided into two one cup portions
1 tbsp. cumin (I only use a teaspoon)
2 tsp. sugar
8 cups cooked chicken chopped into cubes ( just nuke a whole bunch of chicken breast and thighs)
24 flour tortillas

Turn oven on to 400 degrees
In large bowl mix together 2 cups cheese, I can or jar of sauce, all chillies, ! cup sour cream sugar cumin and chicken
Spray or oil a 9" X13" baking dish
put about a 1/3 cup of filling on each tortilla, roll and place in pan seam side down
Cover with remaining enchilada sauce, dot with sour cream and sprinkle with 2 Cups cheese
Bake for 15 Minutes (or 20)

So easy and so yummy
Hash Brown Casserole

2 lb. Frozen hash browns
2-10oz. Cans cream of mushroom soup
500ml sour cream
1/2-cup melted butter
2 grated onions
1-tsp salt
2-cups grated medium cheddar cheese
Parmesan

Mix all ingredients together
Place in a 9 x 13 inch casserole dish
Sprinkle with Parmesan
Bake for 1/2 hour in a 350* oven

I usually like to sprinkle bacon on the top if I know there are no vegetarians in the crowd or also add diced ham in the body.

Oh sorry...I should have included that info...the elegant corn recipe is a side dish recipe. It is pretty basic but it is quite tasty. We have alot of corn lovers in my family and so I often take this recipe for large gatherings. It goes well with any type of meat being served. I usually double the recipe when I make it. :)

Hi...do you eat this on crackers...or is it a veg. dish on the side of main coarses..? Thanks it sounds easy but yummy...

great for pot lucks and BBq's. Friend who don't like the veggies even liked it!

1 sm pk of ground beef
1 pk taco seasoning

cook beef, then add taco seasoning(about 1/2 a pack) and let cool.

Cut up:
1 lettuce
3 tomatos
1 green pepper and add

1/2 cup grated cheese &

1 bag of ranch doritos (broken up)

Add 1 small bottle of catalina dressing.

It is to best to add the chips just before you are ready serve or else they get a little soggy.

the unsweetened or semi sweet chocolate gives a rich colour and takes the acid out of the tomatoes.
You do not taste it.

Foxxy, oh really... chocolate in chili? Never heard of that. I do make pretty good chili though. Tnx for responding. ;-)

I usually double the recipe for a large group...

Elegant Corn

16 oz. can niblets corn(drained)
1 cup soda cracker cumbs
1/3 cup diced celery
1/4 cup onion
3/4 cup shredded cheddar cheese
1 tsp. salt
2 eggs, well beaten
2 tbsp.melted butter
1/4 tsp. paprika (or less but no more for this recipe)
1 cup milk

Combine all ingredients and pour into greased casserole. Bake at
350 degrees for 50 minutes or until set.

I like to make a chili as one of the dishes. I put unsweetened choc. (1 square) in mine and serve it with chopped raw red onions and grated sharp cheddar cheese on top. People love it.
