i decided to make a pot roast for dinner tonite and i'm making it the way my grandmother used to make it when she stayed with me so i thought i would share her recipe with you...she used to make is completely on the stove...reason being that back in the day she did not have an oven...it's really simple and delicious...but you need to be able to spend a couple of hours with it...
beef or pork roast of your preference (any kind of cut can be used)
4 tbsps of olive oil
1 tsp of finely minced garlic
1/2 a medium onion finely chopped
1 tsp of sweet or hot pimento paste
1 tbsp of good quality paprika
2 tbsps of salt (seems like alot but it's not)
2 cups of water
on medium to high heat in a dutch oven add olive oil, garlic, onion, paprika and pimento paste and salt.
once it starts to bubble an cook add the roast and pour water over top.
turn roast around in broth.
and turn heat down to a simmer
let it cook for 2-3 hours
as the water starts to evaporate add more but no more than 1/2 to 1 cup at a time and taste broth add more salt if you think it's needed.
and turn roast every 1/2 hour
once the roast is cooked remove it from the pot and brown in 2 tbsps of olive oil.
strain liquid through a fine sieve(??sp)
reserve liquid and discard anything left in sieve
in a small pot boil the broth that you strained until it starts to thicken
slice roast and place slices on a platter and drizzle the reduced sauce over top
serves really well with white rice (pour beef sauce over rice) or with good old french fries
no turning on the oven strictly on the stove
