If you don't have a slow cooker...
In a dutch oven (heavy-bottomed pot with tight-fitting lid), brown roast all over. Remove to plate; saute onion, garlic, celery, carrots until slightly softened. Return roast to pot, add beef stock, wine, worcestershire, salt, pepper, bay leaf or whatever seasonings you like.
Cover and bring to a boil; reduce to low simmer. Cook for 2-3 hours either on stovetop or in the oven at about 350F until the meat is fork tender.
is okay eys.........i cover mine in butter, flour, mustard and seasoning :p

k as sick as this sounds it does come out yummie...my old grannie always put a little bit of ketchup rubbed on the roast also with some garlic, salt and pepper...large roasting pan just a touch of water on the bottom enough to cover the bottom of the pan..throw on a lid set the oven to 325 degrees and keep checkin every so often till it's cooked to your liking..I always use a meat thermometer. It's easy to cook...good luck and I'm sure it will turn out amazing anyway u cook it! :) you can even be a lazy bum like me and throw in potatoes...carrots then u have dinner in a pot
dandy....thanks trynto...sounds yummy!!
not sure if you have a slow-cooker...because that is how I make pot roasts.....I take an onion soup packet and 1 cup of water ( and a little wine , hp sauce and or worsheriere sauce ( sp) and add it to the bottom of the pot and then plunk the roast down....let it simmer all day 8 -10 hours...............make mashed potatoes and carrots and whip up the gravy from the juices in the slowcooker and you are done................easy...................that's it....turns out everytime tender and moist..........and I always buy the cheapest roast with a bit of fat for optimum flavour.......good luck..get cooking now.....time is running out to be ready for dinner...... :D
