My aunt has a family of vegetarians....and I have noticed that she does a lot of pasta...but when hosting she will do a "mexican night"....she makes the spanish rice, vegetarian chilli, and a buffet to make tacos/tortilla's......she will have beef/chicken along with lettuce, tomato, sour cream, cheese and other condiments.....(the vegetarian's usually add the rice to their tortilla to "beef" it up)......and then everyone can pick and choose......you may be able to come up with more "mexican dishes".....hope this helps..................... :D
DIL doesn't eat meat so when they come I will often make 2 Lasagne for dinner and one will be meatless and it gets eaten by everyone. I agree if youcan make something similar or that everyone will share will make the person feel more comfortable. If you are BBQ burgers the best thing to do is do BBq'd Portabella Mushrooms for a veggie burger they are very tasty and everyone that tries them loves them.
Don't try to make a dish that is just for the vegetarian to eat by herself. Everybody else will want it too. There should be enough of everything that she can just exclude the meat dish. It shouldn't be obvious that she is choosing not to eat meat. Both DH & I have been vegetarians at different points in our lives. Don't make it a big deal and focus on the person. No one should even notice that they aren't eating the meat. Will these be buffet style? How many people? An artichoke entree is always good but if you want something unique be prepared to spend extra time on it Pasta is always a great option.
Red, yellow and green bell pepper strips sauted or stir-fryed in oil with garlic makes a wonderful, colourful dish. Just add salt and pepper for seasoning.
An easy bean salad can be made with just a can of beans (try romano or mixed beans), a little red wine vinegar and olive oil, salt and pepper. I like to add green onion, and sometimes dried dill.
Roasted vegetables of you choosing is nice for everyone.
Cook some cappellini pasta
In a fry pan saute garlic, pine nuts, bite size pieces of frsh spinach and mushrooms in a little olive oil.
Add the cappellini and mix it all in.
Serve with grated cheese. :)
I think the only thing she doesnt eat is fish/meat. I will also be cooking some meat for the rest of us.
Will everyone at the party be eating the vegetarian food as the entree? Do you know what restrictions the vegetarian has selected - vegan, eats fish, no dairy ???. Can be so many or so few limitations on what you should make.
