Traditional and updated desserts for Passover seder.
After receiving her pastry diploma from the Ritz Escoffier École de Gastronomie Française in Paris, Paula Shoyer began a catering company and opened her own stateside cooking school. Located in Chevy Chase, Maryland, Paula's classes are geared towards adults and children wanting to learn both Parisian and Jewish recipes. In The Kosher Holiday Baker cookbook, Shoyer details recipes with instruction typical for someone accustomed to explaining things to new bakers. Though many of her recipes are traditional, Paula gives contemporary spins to some and vegan and/or gluten-free takes on others. For a vegan version of a matzoh cookie, try Paula's chocolate caramel matzoh sandwich cookie.
