After opening a raw food restaurant in Maui, called The Raw Experience, Jeremy A. Safron opened another in San Francisco, and began consulting for several raw restaurants throughout the U.S. His first cookbook, The Raw Truth (2011 Celestial Arts), is full of simple, healthy dishes that are perfect for a raw food diet, quick dinners, or mid-summer meals when it's too hot to slave over the stove. Serve his zucchini pesto wraps (pictured above) at your next party, or try a cold carrot soup for Thanksgiving this year.
