While tofu (made from soybeans) has little taste on its own, marinating this relatively bland food infuses it with loads of flavour. Marinated tofu adds a greater depth of flavour to savoury recipes. For even more flavour, consider adding curry powder, hot chilis, ginger, shallots, mirin, miso paste, horseradish or sherry to this marinade.
350 g block of tofu
3 tbsp soy sauce
1 tbsp water
1 tbsp chopped green onion
1 tsp rice wine vinegar
1 tsp vegetable oil
Step 1: Pat block of firm tofu dry with paper towels, then slice.
Step 2: Combine marinade ingredients in a bowl.
Step 3: Soak tofu slices in marinade for just 20 minutes, if in a hurry, or overnight. Discard marinade before cooking.
