
Chilled asparagus with a creamy dressing. Serve as a summer side dish with barbecued steaks or chicken.
1-2 bunches of asparagus
Drizzle olive oil
1 cup 2% cottage cheese
1 oz. blue cheese (about 1/4 cup crumbled)
1 tsp red wine vinegar
Black pepper to taste
Step 1: Trim and steam the asparagus. Shock in cold or ice water and drain. Drizzle olive oil over asparagus and toss until it is coated. Cover and chill.
Step 2: In a small food processor, purée the cottage cheese until creamy. Add the blue cheese, vinegar and pepper. Pulse until the blue cheese is partially blended in, leaving some larger pieces.
Step 3: To serve, top chilled asparagus with several spoonfuls of blue cheese dressing and toss.
