
Fall is all about enjoying the bounty of harvest. What better way to celebrate than to go apple picking with friends and family, and then make a delicious dessert from the fruits of your labour? When baking with apples, select apples with firm flesh, such as Rome Beauty, Cortland and Granny Smith.
6 apples, cored
1/2 cup quick-cook oats
3/4 cup brown sugar
2 tbsp lemon juice
1 tbsp maple syrup
2 tsp cinnamon
6 tbsp butter
1 pint vanilla ice cream (optional)
Step 1: Preheat oven to 400°F. Place cored apples in baking dish.
Step 2: In a small bowl, combine oats, brown sugar, lemon juice, maple syrup, cinnamon, and butter. Pack mixture into apples.
Step 3: Bake for 18-22 minutes or until apples are soft. Be careful when taking them out of the oven, the apples and filling are hot!
Step 4: Place apples in individual bowls and top each with a scoop of ice cream.
