High-quality lamb chops are so delicious they need nothing more than a hint of garlic and a few dashes of salt and pepper to become gourmet. A cast-iron grill pan is ideal for cooking lamb chops, but any heavy-bottomed pan will do — or the barbecue!
12 middle-loin lamb chops, each about 1-1/2" to 2" thick
2 garlic cloves, peeled and cut in half
Salt and pepper
Step 1: Heat a wide grill or heavy-bottomed pan over medium-high heat.
Step 2: Rub lamb chops all over with cut side of garlic. Brush chops with olive oil and season well with salt and pepper.
Step 3: Grill 5-9 minutes per side, or until cooked to your liking.
