
Toasted pine nuts and sweet raisins lend a new twist to this classic Italian dish.
1-1/2 tbsp olive oil
1/3 cup pine nuts*
1 clove garlic, minced
2 bunches broccoli rabe, leaves and stems removed**
1/4 cup golden raisins 1/3 cup white wine or dry sherry
Coarse sea salt and freshly ground black pepper
*Walnuts or pecans can be substituted for the pine nuts.
**To save time, slice off entire bottoms of broccoli stems and leaves.
Step 1: Heat olive oil in a large pan over medium heat. Add pine nuts and toast, stirring constantly until just barely golden, about 1 to 2 minutes. Add minced garlic and sauté for 1 minute.
Step 2: Add broccoli rabe, raisins and sherry and cover skillet. Cook, stirring occasionally, until broccoli rabe is tender, about 8 to 10 minutes. Season with salt and pepper and serve.
