
This recipe calls for soba, udon or rice noodles which are readily available at most major grocery stores.
1 500 g package soba, udon or thick rice noodles
1 cup snow peas, cut into thin strips
1 red pepper, cut into thin strips
1/2 cup natural smooth peanut butter
2 cloves garlic
1 jalapeño pepper, seeds removed and chopped
1/4 cup light soy sauce
1/4 cup rice vinegar
1/3 cup warm water
2 tbsp sesame oil
1/4 tsp salt
Step 1: In a large pot of boiling salted water, cook noodles following package instructions, until al dente. Drain and rinse with cold water. In a large bowl, combine pasta with snow peas and red pepper.
Step 2: In a blender or food processor, purée peanut butter, garlic, jalapeño pepper, soy sauce, vinegar, sesame oil and salt. Toss noodles and vegetables with dressing to coat. Serve chilled or at room temperature.
