
A healthy brunch side dish.
Batter
1 cup flour
1 tbsp baking powder
1 tsp salt
Freshly ground black pepper
2 eggs
1/2 cup soda water
Other
2 cups whole corn kernels
1/2 cup crumbled feta cheese
1 cup microgreens (such as arugula, kale, wheatgrass or basil), mixed, or one variety
Step 1: Sift dry ingredients.
Step 2: Mix all the batter ingredients until smooth.
Step 3: Add corn and feta cheese, and stir, add microgreens last, stir.
Step 4: Mix in a stand mixer for 10 minutes.
Step 5: Cook spoonfuls in a small amount of oil in a pan over medium heat until golden on both sides.
Step 6: Serve with a chutney of your choice and a microgreen salad.
Makes approximately 12 fritters
