Ernestine’s Elixir Cocktail Recipe

Hints of lichee, cranberry and vanilla make this savoury summer cocktail a refreshing alternative to same-old martinis. This one, developed by mixologists at the Hotel InterContinental Toronto Yorkville, is named for Ernestine's Women's Shelter, which helps women and children escape violent situations.

Ingredients:

Drink
1-1/2 oz. Hpnotiq
1-1/2 oz. Soho Lychee Liqueur
Splash of cranberry juice

Rim
Bury vanilla beans in granulated sugar and store in an airtight container for two weeks.

Instructions:

Step 1: Combine drink ingredients in a shaker with ice. Shake until ice cold.

Step 2: Strain into a chilled vanilla sugar-rimmed martini glass. Garnish with fresh summer fruit. Enjoy!

$1 of every Ernestine’s Elixir sold at the InterContinental will benefit Ernestine’s Women’s Shelter.
