
Easy cookies with cherries, dates and nuts.
1 cup vegetable shortening
2 cups firmly packed brown sugar
2 eggs
1/2 cup buttermilk or water
3-1/2 cups flour*
1 tsp salt
1 tsp baking soda
1-1/2 cups pecans, coarsely chopped
1/2 cup whole pecans
2 cups candied cherries, halved
2 cups honey dates, chopped
* If you are using self-rising flour, omit salt and baking soda.
Step 1: In a large bowl, mix shortening, sugar and eggs well. Stir in buttermilk or water.
Step 2: Sift together dry ingredients then stir into wet mixture, 1/3 at a time. Add the pecans, cherries and dates and mix to combine. Cover bowl with plastic wrap and chill dough for at least 1 hour.
Step 3: Preheat oven to 400°F. Drop heaping teaspoons of dough about 2" apart on lightly greased cookie sheet. Place a pecan half on each cookie, if desired. Bake 8-10 minutes until barely any imprint remains when touched lightly.
Makes 2-3 dozen cookies
