
You can easily make this appetizer or snack for unexpected guests.
2 tbsp olive oil
1/2 cup finely chopped or coarsely grated mild white onion
1 lb. peeled raw shrimp, thawed and drained
Handful cilantro leaves, coarsely chopped
1/4 cup gin
1 tsp sugar
1/2 tsp salt (or more)
A few drops Asian chili oil (or your favourite hot sauce)
Step 1: Heat olive oil in large fry pan on medium heat. Cook onion until soft.
Step 2: Add shrimp and cilantro. Cook until shrimp is opaque.
Step 3: Stir in remaining ingredients. Stir until sugar and salt are dissolved and gin has mostly evaporated. Serve hot.
Makes 4 to 6 appetizer servings
