
One of our top 10 trends for 2011, fregola sarda is a tiny toasted pasta from Sardinia. Look for it at your local Italian grocer.
1 package (usually 1 lb. or 450 g) fregola sarda*
Zest and juice of 1 large lemon
1/4 cup good quality olive oil
1/2 cup fresh basil, chopped
1/4 cup fresh mint, chopped
1/4 cup fresh chives, chopped
Salt and pepper to taste
* You may substitute orzo or Israeli couscous.
Step 1: Bring a large saucepan of salted water to a boil. Add the fregola sarda pasta (or your substitute pasta) and cook following the package directions — and your tastebuds — until al dente. Most brands cook in about 10 minutes.
Step 2: When cooked, drain in colander, then add to a large bowl and toss with lemon zest and juice, olive oil, chopped herbs and salt and pepper to taste. This dish is great served warm or cold.
