Lynda Reeves’ Mac & Cheese Recipe

Recipe:

Step 1: Heat oven to 375°F and position rack in upper third of oven.

Step 2: Using 1 tbsp of butter, grease a 9″ round or square baking dish.

Step 3: In a blender or food processor, combine cottage cheese, milk, mustard, cayenne, nutmeg, salt and pepper. Purée well.

Step 4: In a large bowl, combine the uncooked macaroni with the purée mixture and 3/4 of the grated cheese. (Reserve 1/4 of the grated cheese.) Pour mixture into greased dish, cover with aluminum foil and bake for 30 minutes.

Step 5: Uncover dish, stir gently, dot with remaining 1 tbsp butter and sprinkle the rest of the cheese on top.

Step 6: Bake uncovered for 30 minutes more. Top with panko breadcrumbs if you like.

1 tsp dry mustard
Pinch cayenne
Pinch of freshly grated nutmeg
1/2 tsp salt
