
Easy party appetizers made from choux pastry.
1 cup milk
1 stick butter, cut into pieces
1/2 tsp salt
1 cup flour
5 large eggs
1-1/2 cups shredded Gruyère cheese
1/4 cup chopped chives
Step 1: Preheat oven to 375°F and line two baking sheets with parchment paper.
Step 2: Bring butter, salt and milk to a boil and reduce heat to medium. Add flour and beat with a wooden spoon until mixture pulls cleanly from sides of pan.
Step 3: Transfer mixture to a bowl. With an electric mixer on high speed, add eggs one at a time, incorporating each into mix until dough is shiny and just falls from the spoon.
Step 4: Beat in cheese and chives and drop teaspoon-sized dollops of dough onto baking sheets.
Step 5: Brush tops with beaten egg for shiny finish. Bake for 30 minutes until puffed and golden and serve warm with soups.
Makes about 40 puffs
