
Try these mini cheesecakes, featured on House & Home Television, at a kids birthday party or as a quick mid-week dessert.
3 tubs whipped cream cheese (Philidelphia or other brand)
3 eggs
1/2 cup sugar
1 tsp vanilla extract
1 heaping tsp flour
1 box vanilla wafers
1 can cherry or blueberry pie filling
Mini paper cups
Step 1: Mix all ingredients, except wafers and pie fillings, in blender.
Step 2: Place paper cups in a muffin tin.
Step 3: Place 1 vanilla wafer into each paper cup.
Step 4: Scoop mixture from blender onto top of wafer (fill about halfway, they rise).
Step 5: Bake at 350°F for 20 minutes.
Step 6: Cool and top with pie filling.
