Use leftover cooked pasta and assemble this dish in less than 15 minutes.
12 oz. cooked bow tie or ditalini pasta
2 tbsp olive oil
3 tbsp fresh lemon juice
1 cup crumbled feta cheese
8 plum tomatoes, diced
3 cups cooked, skinless rotisserie chicken, shredded
1 cup fresh basil leaves, torn
Salt and freshly ground black pepper
Step 1: Place pasta in a large bowl; toss with oil, lemon juice, feta cheese, tomatoes, shredded chicken and basil; season with salt and pepper to taste. Serve chilled or at room temperature.
