An easy way to pickle summer cucumbers.
3 medium-sized fresh pickling cucumbers
1 cup white vinegar
1 cup water
1-1/2 tsp kosher salt
1/2 cup sugar
2 tbsp chopped fresh dill
Step 1: Slice pickles lengthwise into four spears.
Step 2: In a small saucepan, bring vinegar, water, salt and sugar to a boil.
Step 3: Place prepared cucumbers in a bowl and pour hot vinegar mixture overtop. Add chopped dill. Let cool on the counter for an hour then put in fridge to chill. Pickles will keep for about one week (although they’re so good, they probably won’t last the day.)
