Try this easy and delicious side dish from Anna Olson of the Food Network.
2-1/2 lb. mini or fingerling potatoes, cut in half
salt & pepper
1 tbsp finely chopped fresh rosemary
Step 1: Preheat oven to 350°F. Toss potatoes with a touch of olive oil to coat, season lightly and add rosemary.
Step 2: Roast in a baking dish, covered for 20 minutes, then uncover and cook until fork-tender, about 25 more minutes, stirring occasionally.
