Boiling the broccoli rabe before sautéeing helps cut down this vegetable's slightly bitter flavour.
2 bunches broccoli rabe, trimmed
2 cloves garlic, minced
2 tbsp grated Parmesan cheese (optional)
Step 1: Bring a large pot of salted water to a boil. Peel the lower stems of the broccoli rabe and place in the boiling water. Cook until tender but still firm, about 5 minutes. Drain.
Step 2: In a large skillet over medium heat, sauté garlic in olive oil for 1-2 minutes, or until golden brown. Add the broccoli rabe to the pan, sprinkle with salt and sauté about 5 minutes. Remove from pan and sprinkle with Parmesan cheese, if desired.
